Instructions
  1. In a large saucepan over medium heat, melt the coconut oil. Add the onion, garlic and jalapeno and cook for 5 minutes, until soft.
  2. Stir in the next 5 ingredients (broth through salt and pepper). Bring mixture to a boil then reduce heat and simmer for 15 minutes.
  3. Stir in the remaining ingredients (lime juice through avocados) cook for 5 to 8 minutes, until the soup is heated through and vegetables are tender.
  4. Remove from heat and serve.
