Instructions
  1. Preheat oven to 375 degrees.
  2. In a large bowl, toss cauliflower, chicken and garlic with coconut oil, salt and pepper to taste, and red pepper flakes. Spread on a foil-lined baking sheet in a single layer and bake until fork tender and lightly browned, about 45 minutes to an hour.
  3. Season the mixture with red wine vinegar, lemon juice, fresh thyme and salt and pepper to taste. Serve right away.
