Instructions
  1. In a large skillet over medium heat, heat the oil.
  2. To the skillet, add the garlic, onion and chicken.
  3. Stir and cook for 5 minutes, then add the remaining ingredients (chicken stock through mint).
  4. Reduce heat to low and cook for 15 minutes, or until chicken is cooked through and vegetables are tender.
  5. Serve warm.
