Golden Squash Soup
- 1 2/3 medium leek sliced
- 2/3 Tablespoon butter
- 1 1/3 cups chicken broth
- 1/8 teaspoon dried thyme
- 1/8 teaspoon pepper
- 2/3 cup shredded cheddar cheese
- 1/8 cup sour cream
- 1/2 green onion thinly sliced
- Saute leeks in butter until tender. To slow cooker add leeks and next 4 ingredients (Squash thru pepper). Cover and cook on LOW 4 hours.
- Stir to mash squash mixture, then add cheese and cook until melted. Garnish with sour cream and green onions.
