Vegetable Quinoa Salad
Ingredients
- 1 small container cherry tomatoes
- 2 stalks green onions
- 1/2 cup fresh dill or other herb
- 1/2 cup parsley
- 1 each cucumber
- 1 red onion
- 1/4 cup feta cheese
- 1 cup quinoa
- 1 each large lemon
- 1/4 cup olive oil
Instructions
- Combine quinoa with 2 cups of water in saucepan, cover, bring to a boil, turn heat down to low, cook 15 minutes, let sit another 10 minutes, then fluff with a fork.
- While quinoa cools, chop all vegetables and add to salad bowl.
- Make the dressing by juicing the lemon, whisking in olive oil, and adding salt and pepper to taste. Mix in with vegetables.
- Add quinoa and feta cheese to salad bowl and serve.
