Vegetable Quinoa Salad

  • 1 small container cherry tomatoes
  • 2 stalks green onions
  • 1/2 cup fresh dill or other herb
  • 1/2 cup parsley
  • 1 each cucumber
  • 1 red onion
  • 1/4 cup feta cheese
  • 1 cup quinoa
  • 1 each large lemon
  • 1/4 cup olive oil


  • Combine quinoa with 2 cups of water in saucepan, cover, bring to a boil, turn heat down to low, cook 15 minutes, let sit another 10 minutes, then fluff with a fork.
  • While quinoa cools, chop all vegetables and add to salad bowl.
  • Make the dressing by juicing the lemon, whisking in olive oil, and adding salt and pepper to taste. Mix in with vegetables.
  • Add quinoa and feta cheese to salad bowl and serve.
