General All Purpose Meal - can be made ahead and put in refrigerator
- 3 oz leafy lettuce spring mix works great
- 1/4 cup radish chopped
- 1/4 cup carrot chopped
- 1/2 each avocadoe sliced
- 1/3 each tomatoe chopped
- 6 oz hummus
- 1/4 cup sauerkraut
- 1/4 cup celery chopped
- 1/4 cup red or green pepper chopped
- Add all ingredients in a bowl and toss. Add dressing of your choice.
- You can also add any leftover vegetables that need to be eaten ... many cooked veggies are also nice on a salad, or a boiled egg
