Raspberry Balsamic Pork
Ingredients
- 2 pounds pork tenderloin
- 2 tablespoons ghee or use coconut oil, melted
- 1/2 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1 medium red onion chopped
- 3 tablespoons raw honey
- 1/2 cup raspberries fresh or frozen
- 1/4 cup balsamic vinegar
- 1/3 cup red wine
- 1/2 teaspoon dried rosemary crushed
Instructions
- Place tenderloin in a large slow cooker.
- In a small bowl, whisk together remaining ingredients (ghee through rosemary); pour over tenderloin in slow cooker.
- Cover and cook on LOW for 8 to 10 hours.
Notes
SERVING SUGGESTION: Baked sweet potatoes and steamed baby Brussels sprouts.
