Sliced London Broil Salad
- London broil leftover from Marinated Garlic Rosemary London Broil
- 2 large avocados peeled, pitted and chopped
- 1/4 cup full fat coconut milk
- 2 tablespoons apple cider vinegar
- 4 tablespoons chopped fresh parsley
- 1/4 cup chopped olives
- sea salt and freshly ground black pepper to taste
- 8 cups mixed leafy greens
- 1/4 cup chopped chives
- 1/2 cup chopped purple cabbage
- In a medium bowl, toss together all the ingredients and serve right away.
