Chopped Chicken and Zucchini Warm Salad

  • 3 tablespoons ghee
  • 1 garlic clove minced
  • 4 cups chopped zucchini
  • sea salt and freshly ground black pepper to taste
  • Leftover chicken from Dinner Day 3 removed from the bone and chopped


  • In a large skillet, heat the ghee over medium-high heat. Add garlic, sauté for about 1 minute until fragrant, then add zucchini and toss for another 5 minutes, until tender. Season with salt and pepper and then toss in the chicken and cook until warm. Serve hot.
