Shepherd’s Pie
Ingredients
- olive oil
- 1 medium onion chopped
- 1 large carrot chopped
- 1 medium stalk celery chopped
- 3 cloves garlic pressed
- 1 1/2 pounds ground beef sirloin
- 1 14.5-oz. can stewed tomatoes
- 3 tablespoons Worcestershire sauce
- 1 tablespoon balsamic vinegar
- 3 tablespoons dry red wine
- 3 tablespoons tomato paste
- 1 teaspoon sea salt
- 1 teaspoon freshly ground black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary crushed
- 1 head cauliflower steamed
- 3 tablespoons ghee or use olive oil
- 3/4 cup unsweetened coconut milk
- 1 teaspoon sea salt
- 2 teaspoons freshly ground black pepper
Instructions
- DO-AHEAD TIP: Steam cauliflower.
- Preheat oven to 350 degrees.
- Heat the olive oil in a large skillet over medium-high heat. Add onion, carrot, celery, and garlic; cook and stir for 1 minute or until onions start to become translucent. Add ground sirloin and cook for 4 to 7 minutes or until browned and cooked through.
- Transfer mixture to a large (and deep) baking dish; add next 9 ingredients (tomatoes through rosemary); stir until well blended and somewhat thickened.
- In a large saucepan, combine remaining ingredients for Faux-Tay-Toes (cauliflower through pepper); mash together until fully blended.
- Evenly spread cauliflower mixture over meat/tomatoes mixture in baking dish; bake for 25 minutes or until cauliflower turns golden brown on top.
Notes
SERVING SUGGESTION: Add steamed broccoli spears on the side.
