Coconut Chia Pudding
- 4 cups full fat coconut milk
- 1/2 cup chia seeds
- 2 teaspoons pure vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 cup unsweetened shredded coconut
- Stevia to taste
- In a large bowl, add all ingredients, stir to combine and then cover with plastic wrap and refrigerate for 2 hours. Serve chilled.
