Chicken Citrus Salad
- 2 large boneless skinless chicken breasts cooked and chopped
- 1/3 cup paleo mayo
- 2 teaspoons apple cider vinegar
- 1 large lime juiced and zested
- 2 tablespoons chopped cilantro
- 1/4 cup minced chives
- 2 cups chopped cucumber
- 1 cup baby kale
- 1 large avocado peeled, pitted, and sliced
- sea salt and freshly ground black pepper to taste
- 1 large head romaine lettuce leaves removed and washed
- In a large bowl, combine all ingredients EXCEPT lettuce (chicken through salt and pepper). Once fully mixed together, serve in lettuce leaves!
