[wpurp-searchable-recipe]Swedish Meatballs and Faux-tatoes – – Swedish Meatballs: coconut flour, eggs, garlic (minced), sea salt, freshly ground black pepper, ground white pepper, allspice, yellow onions (diced), ground beef, ground pork, parsley (finely chopped), ghee, Sauce: ghee, arrowroot, low sodium beef broth, full fat canned coconut milk, Dijon mustard, sea salt, freshly ground black pepper, Faux-tatoes: cauliflower (steamed), grass fed butter, full fat canned coconut milk, sea salt, freshly ground black pepper, In a large bowl, combine all ingredients for the meatballs, except ghee. Using your hands, mix together all ingredients until thoroughly combined. Make 1 to 2 inch thick meatballs and set aside.; Heat ghee in a large skillet over medium high heat. Place meatballs in skillet and cook for 2 to 3 minutes per side, or until cooked through. Each side should be evenly browned. Repeat process until all meatballs are cooked. ; *Reserve half of the meatballs for the following day’s lunch (Meatball Lettuce Wraps).; Once meatballs are done, reduce heat to medium low and add in ghee for the sauce. Add arrowroot to the skillet and whisk together until it makes a thick paste. Pour in broth and whisk together until fully incorporated. ; Increase heat to medium high, and begin to simmer and thicken sauce. Once considerably thicker, whisk in all remaining ingredients (coconut milk through pepper). Then remove from heat and set aside.; In a food processor, combine all ingredients for faux-tatoes (cauliflower through pepper).
