Low-Carb Mexican Casserole

  • 1 Lb Ground turkey
  • 1 Pkg Taco Seasoning
  • 1/2 Cup Chopped green onion Divided
  • 3/4 Cup Salsa
  • 1 Cup Shredded Mexican cheese blend
  • 15 Oz Canned black beans Drained and rinsed
  • 1/4 Cup Black olived Chopped
  • 4 Tbsp Sour cream


  • In a skillet, over medium high heat, cook turkey. Stir in taco seasoning mix and remove from heat. Mix in black beans. Preheat oven to 375 Spread turkey and bean mixture in the bottom of 8X8 square baking dish Sprinkle half the green onions over the turkey mixture. Top with salsa and sprinkle cheese on top Bake for 10-15 minutes or until Cheese is bubbling and hot Serve with the remainder of green onions, black olives, and sour cream. Can eat with chips if desired
