Tomato Thyme Halibut
Ingredients
- Coconut oil
- 4 halibut fillets or use another firm-fleshed white fish, 6-oz.
- Sea salt and freshly ground black pepper to taste
- 2 cups cherry tomatoes halved 1 tablespoon tomato paste
- 1 tablespoon lemon juice
- 1 tablespoon white wine
- 2 tablespoons water
- 2 cloves garlic pressed
- 1 teaspoon dried thyme
Instructions
- Melt a little coconut oil in a large skillet over medium-high heat.
- Lightly season fish with salt and pepper then add to the skillet and sear for 3 to 4 minutes per side. Remove from skillet and keep warm.
- In the same skillet, melt a little more coconut oil over medium-high heat.
- Add remaining ingredients (tomatoes through thyme); bring to a boil then reduce heat and simmer for 1 to 2 minutes.
- Serve sauce over fish and enjoy it!
