Citrus Herb Salmon Salad
- 2 5 ounce cans salmon drained,
- 1/3 cup paleo mayo
- 2 teaspoons apple cider vinegar
- 1 large lemon juiced and zested
- 2 tablespoons fresh dill
- 1/4 cup minced chives
- 2 cups chopped cucumber
- 1 cup arugula shredded
- 1 large avocado peeled, pitted and sliced
- sea salt and freshly ground black pepper to taste
- 1 small head of romaine lettuce removed and washed
- In a large bowl, combine all ingredients except lettuce (salmon through salt and pepper). Once fully mixed together, serve in lettuce leaves!
