Parmesan Fish

Servings 4 people


  • olive oil
  • 3 tablespoons grated Parmesan cheese
  • 1 tablespoon unsalted butter softened
  • 1 tablespoon low fat mayonnaise
  • 1 tablespoon lemon juice
  • 1/8 teaspoon dried basil
  • sea salt and freshly ground black pepper to taste
  • 1/4 teaspoon garlic powder
  • 4 firm-fleshed white fish fillets 6-oz.


  • Preheat oven broiler; lightly coat broiler pan rack with oil.
  • In a small bowl, combine next 4 ingredients (cheese through lemon juice); add basil, salt, pepper and garlic powder; blend well and set aside. Broil fish for 3 to 4 minutes then turn and smear with cheese mixture; broil for 2 to 3 minutes or until fish flakes easily when tested with a fork.
  • Watch fish closely so that you don’t overcook it.
