- 1-2 tbsp butter
- 1-2 onions sliced
- 500 g chicken cubed
- 500 g frozen vegetables
- 2-3 cups chicken broth
- 1 tsp curry or to taste
- additional seasoning to taste
- 1.5 cups cooked rice to serve
- 1. In a saucepan or stockpot brown onions in butter until transparent. 2. Add cubed chicken, seasoning and curry to saucepan and seal all sides of chicken cubes. 3. Add chicken stock and let cook on low for about an hour. 4. Add frozen vegetables and cook for additional hour or so until vegetables and chicken are cooked. 5. Serve with cooked rice.
