Italian sausage and kale casserole

Ingredients
- 2 1/2 tbsp olive oil
- 1 small yellow onion diced
- 1 large carrot diced
- 1/2 lb cremini mushrooms thinly sliced
- pinch salt
- pinch black pepper
- 1 lb italian sausage
- 1 lb kale remove stems and leaves thinly sliced
- 3 cloves garlic
- 1 cup marinara sauce
- 1/2 teaspoon dried oregano
- 5 large eggs whisked
- 1/4 cup paleo friendly pesto optional
Instructions
- Preheat oven to 400 F. Heat a large skillet over medium-high heat.
