grilled greek summer squash salad

light and refreshing, it is the perfect side salad to serve with your favorite grilled meat.
Servings 6



  • 2 medium yellow squash cut lengthwise into quarters
  • 2 medium zucchini cut lengthwise into quarters
  • 1/4 tsp crushed red pepper
  • pinch Salt and pepper
  • 2 Roma tomatoes cut into 1-inch pieces

Greek Dressing

  • 1/4 cup lemon juice
  • 2 tsp red wine vinegar
  • 2 cloves garlic crushed into a paste
  • 1 tbsp chopped fresh oregano
  • 1/2 tsp Dijon mustard
  • pinch Salt and pepper
  • 1/2 cup extra virgin olive oil


Greek Dressing

  • In a bowl whisk together the lemon juice, vinegar, garlic, ,oregano, mustard, salt and pepper. Drizzle olive oil while whisking.


  • Heat grill or grill pan to medium-high heat
  • In a large bowl, toss the squash with the greek dressing, crushed red pepper, salt, and black pepper
