grilled greek summer squash salad
light and refreshing, it is the perfect side salad to serve with your favorite grilled meat.
Ingredients
Salad
- 2 medium yellow squash cut lengthwise into quarters
- 2 medium zucchini cut lengthwise into quarters
- 1/4 tsp crushed red pepper
- pinch Salt and pepper
- 2 Roma tomatoes cut into 1-inch pieces
Greek Dressing
- 1/4 cup lemon juice
- 2 tsp red wine vinegar
- 2 cloves garlic crushed into a paste
- 1 tbsp chopped fresh oregano
- 1/2 tsp Dijon mustard
- pinch Salt and pepper
- 1/2 cup extra virgin olive oil
Instructions
Greek Dressing
- In a bowl whisk together the lemon juice, vinegar, garlic, ,oregano, mustard, salt and pepper. Drizzle olive oil while whisking.

- Heat grill or grill pan to medium-high heat
- In a large bowl, toss the squash with the greek dressing, crushed red pepper, salt, and black pepper
