Caramelized Pork
Ingredients
- Olive oil
- 1 pound lean pork tenderloin cut into 1/2-inch slices
- 2 cloves garlic pressed
- 2 tablespoons brown sugar
- 1 tablespoon orange juice
- 1 tablespoon molasses
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
Instructions
- Heat a large oil-coated skillet over medium-high heat; add pork slices and garlic and cook for 6 to 8 minutes, turning occasionally, until pork is browned on the outside and no longer pink in the center (6 to 8 minutes), turning occasionally; drain if necessary.
- Stir in remaining ingredients and cook until mixture thickens and coats pork.
Notes
LC SERVING SUGGESTION: Faux-Tay-Toes (steam cauliflower till tender; drain; mash with butter, cream cheese and salt and pepper to taste till you get a mashed potatoes texture).
Add steamed baby Brussels sprouts tossed with a little butter and a dash of ground nutmeg.
SERVING SUGGESTION: Instead of Faux-Tay-Toes, serve steamed baby new potatoes tossed with butter and chopped parsley.
KOSHER: Use boneless skinless chicken thighs.
GLUTEN FREE: Make sure molasses is gluten free.
