Eggbert's Hero
Ingredients
- 2 loaves French bread
- mustard to taste
- low fat mayonnaise to taste
- 6 leaves romaine lettuce
- 12 eggs hard-boiled and sliced
- 1 English cucumber sliced
- 2 medium tomatoes sliced
- 1/3 cup cucumber salad dressing
Instructions
- DO-AHEAD TIP: Hard-boil eggs.
- Split loaves of bread in half lengthwise; spread mustard on one side of each loaf and mayo on the other side.
- Line the mustard-covered bread halves with lettuce then top each with half of the sliced eggs and half of the cucumbers and tomatoes; drizzle with dressing; top with mayo-covered bread halves.
- Cut each sandwich into thirds and enjoy!
Notes
SERVING SUGGESTION: Buttered corn on the cob and a relish tray of baby carrots, celery sticks, and whole black olives.
