  • 2 loaves French bread
  • mustard to taste
  • low fat mayonnaise to taste
  • 6 leaves romaine lettuce
  • 12 eggs hard-boiled and sliced
  • 1 English cucumber sliced
  • 2 medium tomatoes sliced
  • 1/3 cup cucumber salad dressing


  • DO-AHEAD TIP: Hard-boil eggs.
  • Split loaves of bread in half lengthwise; spread mustard on one side of each loaf and mayo on the other side.
  • Line the mustard-covered bread halves with lettuce then top each with half of the sliced eggs and half of the cucumbers and tomatoes; drizzle with dressing; top with mayo-covered bread halves.
  • Cut each sandwich into thirds and enjoy!


SERVING SUGGESTION: Buttered corn on the cob and a relish tray of baby carrots, celery sticks, and whole black olives.
