Paleo Chicken Burrito Bowls
Ingredients
Chicken
- 1 1/2 lbs boneless skinless chicken breast cut to bite size
- 1 tablespoon coconut oil or avocado oil
- 3/4 teaspoon sea salt
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 1/2 teaspoon chili powder
- 1 pinch chipotle chili powder
- 2 limes lime juice
Cauliflower Rice
- 1 lb Cauliflower rice Costco 5 lb bag
- 1 tablespoon coconut oil or avocado oil, ghee
- 3/4 teaspoon sea salt
- 1-2 tablespoon fresh lime juice
- 1 whole jalapeno pepper minced without seeds
- 3/4 teaspoon onion powder
- 3/4 teaspoon garlic powder
- 1 dash chipotle chili powder
Peppers and Onions
- 1 large onion sliced thin
- 1 large red bell pepper sliced thin
- 1 tablespoon coconut oil or other cooking fat
- sea salt to taste
Guacamole
- 2 avocados
- 1/4 cup minced onion
- 2 cloves garlic minced
- 1 jalapeno pepper minced
- 2 tablespoon fresh lime juice or to taste
- 2 tablespoon chopped fresh cilantro
