Vegan Bahn Mi Sandwiches
- 1 large baguette cut into 4 pieces and then sliced in half and toasted
- 1/4 cup Vegan mayonnaise
- 1 tablespoon Sriracha
- 1 medium cucumber peeled and sliced thinly lengthwise
- 1 cup shredded carrots
- 1 cup bean sprouts
- 1 large avocado pitted and sliced
- 1 large jalapeno pepper sliced thin
- 2 large limes
- sea salt
- In a small bowl, combine vegan mayo and sriracha. Spread onto 1 side of each set of baguettes. Then evenly layer cucumber, carrots, sprouts, avocado, and jalapeno.
- Saturate everything with lime juice and lightly season with salt. Sandwich with second piece of baguette and serve.
