Vegan Bahn Mi Sandwiches

  • 1 large baguette cut into 4 pieces and then sliced in half and toasted
  • 1/4 cup Vegan mayonnaise
  • 1 tablespoon Sriracha
  • 1 medium cucumber peeled and sliced thinly lengthwise
  • 1 cup shredded carrots
  • 1 cup bean sprouts
  • 1 large avocado pitted and sliced
  • 1 large jalapeno pepper sliced thin
  • 2 large limes
  • sea salt


  • In a small bowl, combine vegan mayo and sriracha. Spread onto 1 side of each set of baguettes. Then evenly layer cucumber, carrots, sprouts, avocado, and jalapeno.
  • Saturate everything with lime juice and lightly season with salt. Sandwich with second piece of baguette and serve.
