Pumpkin Chili
Ingredients
- 1 28-oz. can crushed tomatoes
- 1 14.5-oz. can pumpkin puree 14.5 ounce
- 1 14.5-oz. can black beans drained
- 1 14.5-oz. can kidney beans drained
- 1 14.5-oz. can corn drained
- 4 cloves garlic minced
- 1 medium onion diced
- 1 medium zucchini chopped
- 2 medium sweet potatoes peeled and cubed
- sea salt and freshly ground black pepper to taste
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon chili powder
- 1/2 teaspoon ground cinnamon
- 2 tablespoons apple cider vinegar
- 2 tablespoons coconut oil
Instructions
- Combine all ingredients in a slow cooker. Stir to combine, and cook on low for 7 to 8 hours. Adjust salt and pepper as necessary, then serve!
