Ham Salad

Servings 6 Serves



  • 2 tablespoons olive oil
  • 2 tablespoons orange juice
  • 3 teaspoons balsamic vinegar
  • 1 tablespoon Dijon mustard


  • 3 cups chopped lean deli ham OR turkey breast
  • 3 cups spinach leaves
  • 4 cups mixed baby greens
  • 1 cup cubed cantaloupe OR honeydew melon
  • 3/4 cup cubed fresh peaches
  • 1/2 cup sliced red onion
  • 1/4 cup chopped pecans


  • In a small bowl, whisk together dressing ingredients; set aside.
  • In a large bowl, toss together salad ingredients then drizzle dressing on top; serve.


SERVING SUGGESTION: Whole grain rolls and butter.
VEGETARIAN: Omit ham and use chopped tempeh instead.
KOSHER: Use turkey.
GLUTEN FREE: Make sure vinegar and mustard are gluten free.
