Guacamole and Veggie Sticks
- 1 large avocado pitted
- 3 teaspoons fresh lime juice
- 1 teaspoon ground garlic
- sea salt and freshly ground black pepper to taste
- 1/2 cup chopped red onion
- 3 tablespoons chopped cilantro
- 3 tablespoons olive oil
- 3 large stalks celery chopped into 4-inch pieces
- 3 large carrots peeled and chopped into 4-inch pieces
- In a food processor or blender, add ingredients 1 to 7 (avocado through olive oil) and pulse until the mixture is a chunky texture. Serve alongside veggie sticks.
