Egg Salad on Butter Lettuce
- 4 large eggs hard boiled, peeled and chopped
- 2 medium avocados pitted and chopped
- 2 tablespoons chopped parsley
- 2 teaspoons ground garlic
- 1 teaspoon ground paprika
- Sea salt and freshly ground black pepper to taste
- 4 cups chopped butter lettuce
- 4 teaspoons coconut aminos
- In a medium-size bowl, mix together ingredients 1 to 6 (eggs through salt and pepper) to form an egg salad.
- Place egg salad on top of butter lettuce drizzled with coconut aminos and serve immediately.
