- 8 large hard boiled eggs peeled and halved
- 2 medium avocados pitted
- 2 teaspoons fresh lemon juice
- Sea salt and freshly ground black pepper to taste
- 4 tablespoons chopped parsley
- In a large bowl, mix egg yolks with the next 4 ingredients (avocados through parsley). Place mixture into egg whites and serve chilled.
