Breakfast Skillet with Sliced Avocado

  • 6 slices bacon
  • 4 cloves garlic minced
  • 1/2 large red onion chopped
  • 4 cloves garlic minced
  • 1/2 pound ground pork
  • 2 tablespoons coconut oil
  • 2 cups shredded butternut squash
  • 3 cups baby spinach
  • 6 large eggs beaten
  • 4 tablespoons chopped chives
  • 1 small avocado pitted and thinly sliced


  • In a large skillet on medium heat cook the bacon slices until desired crispiness, about 5 to 8 minutes. Remove from skillet, place onto paper towel lined plate and then crumble into small pieces. Add garlic and onion to the same heated skillet with remaining bacon grease and cook for 3 to 5 minutes, or until translucent. Add ground pork and cook for 7 to 10 more minutes, or until browned and cooked throughout.
  • Place oven broiler on high.
  • In another large skillet on medium-high heat, heat coconut oil, add shredded butternut squash and spinach and cook for 5 to 8 minutes, or until slightly softened. Combine the squash mixture with crumbled bacon and pork mixture into one skillet. Pour eggs over the combined mixture and broil for 5 to 7 minutes, or until the eggs are cooked throughout. Garnish with chives and serve warm alongside avocado slices
