Indian Spiced Chicken

  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon coriander seeds
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon crushed red pepper flakes
  • 1 tablespoon coconut oil melted
  • 4 boneless skinless chicken breast halves 6-oz.


  • Preheat outdoor grill to MEDIUM-HIGH. In a small bowl, combine all seasonings (salt through crushed red pepper flakes).
  • Brush the melted coconut oil over all sides of the chicken then sprinkle evenly with seasonings. Grill chicken for 4 to 6 minutes per side or until juices run clear.


SERVING SUGGESTION: Cauli-Rice (process cauliflower in a blender or food processor until it resembles grains of rice; steam “rice” till tender; drain; salt and pepper to taste and fluff with a fork). Add grilled or stir-fried sliced zucchini, yellow squash and red bell pepper on the side.
