Sweet and Sour Beef Stir-Fry
Ingredients
- 2 tablespoons coconut oil
- 1 medium green bell pepper de-seeded, de-ribbed and chopped
- 1 medium red bell pepper de-seeded, de-ribbed and chopped
- 1 medium red onion coarsely chopped
- 1 14-oz. can pineapple chunks
- 3 cloves garlic pressed
- 2 teaspoons ginger freshly grated
- 1 1/2 pounds flank steak cut into thin strips
- 1/4 cup pineapple juice
- 3 tablespoons coconut aminos
- 1 tablespoon cider vinegar
- 1 teaspoon crushed red pepper flakes
- 1 teaspoon sea salt
Instructions
- Melt the coconut oil in a large skillet or wok over medium-high heat. Add next 6 ingredients (bell peppers through gingerroot); stir-fry for 3 to 4 minutes.
- Add steak strips and stir-fry for 5 minutes. Add remaining ingredients (pineapple juice through sea salt); reduce heat to medium-low then stir well and simmer for 8 to 10 minutes.
- Remove from heat and allow mixture to sit for 5 minutes before serving.
Notes
SERVING SUGGESTION: Serve over chopped baby bok choy; add steamed baby carrots and steamed
