Strawberry Balsamic Pork
2 pounds pork tenderloin
1 1/2 cups chopped strawberries
1/4 cup balsamic vinegar
2 tablespoons ghee, melted, or use coconut oil
2 tablespoons raw honey
1/2 tablespoon sea salt
Ingredients
- 2 pounds pork tenderloin
- 1 1/2 cups chopped strawberries

Instructions
- Place tenderloin in a large slow cooker.
- In a large bowl, whisk together remaining ingredients; pour mixture over tenderloin. Cover and cook on LOW for 8 to 10 hours. Transfer tenderloin to a cutting board.
- Pour slow cooker juices into a blender and process until smooth; serve sauce over sliced pork.
Notes
SERVING SUGGESTION: Steamed green beans and a big salad of mixed baby greens, sliced red onion, cucumber and avocado, tossed with Leanne’s Basic Vinaigrette.
