Sweet “Sloppy Joe” Lettuce Wraps
Ingredients
- 2 tablespoons coconut oil
- 3 cloves garlic pressed
- 1/2 medium red onion minced
- 2 pounds lean ground beef
- sea salt to taste
- freshly ground black pepper to taste, as tolerated
- Sloppy Joe sauce:
- sea salt to taste
- freshly ground black pepper to taste, as tolerated
- 3 tablespoons coconut aminos
- 8 large dates pitted
- 1 small lemon zested and juiced
- 8 large leaves lettuce lettuce of your choice
Instructions
- Melt the coconut oil in a large skillet with a tight-fitting lid over medium-high heat. Add garlic and onion; cook for 2 minutes.
- Add ground beef, salt and pepper; cook, breaking up ground beef with a wooden spoon, until no longer pink.
- Reduce skillet heat to medium-low; cover and cook for 15 minutes, stirring every 3 minutes, until ground beef is browned and cooked through.
- In a food processor, add the remaining ingredients and pulse until smooth. Pour sauce over the meat mixture and stir. Serve in lettuce wraps.
Notes
SERVING SUGGESTION: A relish tray of carrot and celery sticks, and cucumber spears; add Sweet Potato Fries (cut sweet potatoes into “fries”; toss with a little olive oil, salt and pepper and bake in a 425-degree oven, turning once, until tender.
