Apple Cinnamon Lamb Chops

  • 1 large resealable bag
  • 8 lamb chops
  • 1/3 cup apple cider vinegar
  • 1/4 cup unsweetened applesauce
  • 2 tablespoons olive oil
  • Sea salt to taste
  • Freshly ground black pepper to taste, as tolerated
  • 1 teaspoon ground cinnamon
  • 1 tablespoon minced rosemary


  • Place lamb chops in a large zipper-topped plastic bag. In a small bowl, whisk together remaining ingredients (vinegar through rosemary); pour mixture over lamb chops.
  • Seal the bag and turn to coat; refrigerate overnight or for at least 4 hours.
  • At time of cooking, preheat grill to MEDIUM-HIGH. Remove lamb chops from marinade and grill for 4 to 7 minutes per side or until cooked to desired level of doneness.


SERVING SUGGESTION: Grilled eggplant; add baby spinach sautéed in olive oil and garlic then sprinkled with a little balsamic vinegar.
