Apple Cinnamon Lamb Chops
Ingredients
- 1 large resealable bag
- 8 lamb chops
- 1/3 cup apple cider vinegar
- 1/4 cup unsweetened applesauce
- 2 tablespoons olive oil
- Sea salt to taste
- Freshly ground black pepper to taste, as tolerated
- 1 teaspoon ground cinnamon
- 1 tablespoon minced rosemary
Instructions
- Place lamb chops in a large zipper-topped plastic bag. In a small bowl, whisk together remaining ingredients (vinegar through rosemary); pour mixture over lamb chops.
- Seal the bag and turn to coat; refrigerate overnight or for at least 4 hours.
- At time of cooking, preheat grill to MEDIUM-HIGH. Remove lamb chops from marinade and grill for 4 to 7 minutes per side or until cooked to desired level of doneness.
Notes
SERVING SUGGESTION: Grilled eggplant; add baby spinach sautéed in olive oil and garlic then sprinkled with a little balsamic vinegar.
