Spiced Roast Chicken

Servings 4 people


  • 1 whole roasting chicken 2-lb.
  • 1 teaspoon ground cinnamon
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground black pepper
  • 1/4 cup lemon juice
  • 2 tablespoons raw honey


  • Preheat oven to 400 degrees. Place chicken in a roasting pan.
  • In a small bowl, whisk together remaining ingredients (cinnamon through honey).
  • Pour mixture evenly over chicken then bake for 1 hour and 20 minutes or until cooked through.


SERVING SUGGESTION: Steamed asparagus and a big salad tossed with Leanne’s Basic Vinaigrette.
