Fresh Salmon Cakes
- 2 cups cooked salmon
- 1 cup chopped onion
- 1/2 teaspoon minced garlic
- 1/4 teaspoon sea salt
- 1 teaspoon freshly ground black pepper
- 1 teaspoon parsley
- 1 large egg
- 1 tablespoon olive oil
- In a large bowl combine the first 7 ingredients (salmon through egg). Form into 4 patties.
- In a large skillet over MEDIUM heat, add olive oil and cook patties for 4 minutes on each side until slightly brown.
- Serve immediately.
SERVING SUGGESTION: Braised Kale (Remove ribs from greens. Heat 2 tablespoons olive oil in a large skillet with a tight-fitting lid over medium heat. Gradually add greens and cook, turning with tongs, until slightly wilted; add 1 cup of water or broth and salt and pepper to taste; cover and simmer for 5 minutes.)
