Balsamic Glazed Pork Stir-Fry
Ingredients
- 2 teaspoons olive oil
- 1/4 teaspoon crushed red pepper flakes
- 3 cloves garlic minced
- 1 tablespoon grated ginger
- 1/4 cup sliced green onions
- 1 pound pork tenderloin cubed
- 1 pound bok choy chopped
- 1/2 cup thinly sliced carrots
- 2 tablespoons balsamic vinegar
- sea salt and freshly ground black pepper to taste
Instructions
- Heat the oil in a large skillet over medium-high heat.
- Add crushed red pepper flakes, garlic, gingerroot and green onions; cook until soft.
- Add pork cubes, bok choy, carrots and balsamic vinegar; season with salt and pepper.
- Cook and stir until pork cubes are no longer pink in the center and sauce has started to bubble.
- Remove from heat and serve.
Notes
LC SERVING SUGGESTION: Add stir-fried sliced zucchini, mushrooms and red bell pepper.
