Crusted Parmesan Chicken

  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 4 boneless skinless chicken breasts
  • 1/2 cup grated Parmesan cheese
  • 3 tablespoons melted butter
  • 1/4 cup crushed almonds
  • 2 tablespoons bread crumbs
  • 1 tablespoons fresh lemon juice
  • 1 teaspoon seafood seasoning
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon freshly ground black pepper
  • sea salt to taste


  • In a large skillet over MEDIUM heat, cook olive oil and garlic for 3 minutes.
  • Add the chicken and cook for 5 minutes on each side. Remove from heat.
  • In a large bowl mix the rest of the ingredients together (cheese through salt.)
  • Top chicken in skillet with bowl mixture. Place skillet in a 350 degree oven for 10 minutes or until topping is lightly brown. Remove from heat and serve warm.


SERVING SUGGESTION: Cauli-Rice (Process cauliflower in a blender or food processor until it resembles grains of rice; steam “rice” till tender; drain; salt and pepper to taste and fluff with a fork.)
