Sweet Potato Chia Seed Pudding
- 1 14-oz. can sweet potato puree
- 1 cup unsweetened coconut milk
- 1/2 cup dry chia seeds
- 1 tablespoon pure maple syrup
- 1 teaspoon vanilla extract
- pinch sea salt
- In a large bowl, mix all the ingredients well.
- Cover bowl and refrigerate for at least 2 hours.
- Serve chilled.
