Cucumber Shrimp Salad
- 1 pound shrimp cooked, deveined and shelled
- 2 medium cucumbers peeled and chopped
- 1 small tomato chopped
- 1/2 medium red onion sliced
- 1/4 cup chopped fresh cilantro
- 3 tablespoons fresh lime juice
- 1 tablespoon chili powder
- 1 tablespoon honey
- sea salt and freshly ground black pepper to taste
- In a large bowl, toss all the ingredients and serve.
