Chocolate Mint Chia Seed Pudding
- 2 cups dry chia seeds
- 4 cups unsweetened coconut milk
- 3 tablespoons raw honey
- 3 tablespoons cocoa powder
- 1/2 teaspoon cinnamon
- 1/2 teaspoon peppermint extract
- pinch sea salt
- In a large bowl, whisk all the ingredients well.
- Cover bowl and refrigerate for at least 2 hours (until pudding is set). Serve cold.
