Apricot Pecan Energy Bites

  • 1 cup unsweetened dried apricots
  • 1/2 cup chopped pecans
  • 1/3 cup unsweetened applesauce
  • 1/4 cup unsweetened coconut flakes
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • Sea salt to taste


  • In a large food processor, blend all the ingredients until smooth. Scoop dough in a 1 tablespoon measuring spoon and roll into balls.
  • Place balls on a plate or cookie sheet and refrigerate for 1 hour. Serve chilled.
