Apricot Chia Seed Pudding
- 1 cup unsweetened pure apricot preserves
- 1 cup unsweetened coconut milk
- 1/2 cup chia seeds
- 1 teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- In a large bowl, mix all the ingredients well. Cover bowl and refrigerate for at least 2 hours. Serve chilled.
