Southwest Stuffed Avocadoes
Ingredients
- 4 large hard-boiled eggs peeled and chopped
- 2 medium tomatoes chopped
- 1 small onion chopped
- 2 tablespoons minced fresh cilantro
- 1 medium jalapeno seeded and minced
- 1 large lime juiced
- sea salt and freshly ground black pepper to taste
- 4 large ripe avocados halved and pitted
Instructions
- In a large bowl, toss together all ingredients except avocado. Once fully combined, scoop into avocado halves and enjoy!

I didn’t stuff the avocados with the mixture, but rather cut up avocado into the mixture and ate it that way with a fork. It was quite tasty! But I realized after eating it that it’s really just pico de gallo with hard boiled egg and avocado.
But anyway I did enjoy it. If you’re okay with making it a bit less healthy, it would probably work great as a dip with tortilla chips!
