Southwest Stuffed Avocadoes

  • 4 large hard-boiled eggs peeled and chopped
  • 2 medium tomatoes chopped
  • 1 small onion chopped
  • 2 tablespoons minced fresh cilantro
  • 1 medium jalapeno seeded and minced
  • 1 large lime juiced
  • sea salt and freshly ground black pepper to taste
  • 4 large ripe avocados halved and pitted


  • In a large bowl, toss together all ingredients except avocado. Once fully combined, scoop into avocado halves and enjoy!
