Dijon Egg Salad

Servings 2 servings


  • 4 large hard-boiled eggs peeled and chopped
  • 1/2 small red onion chopped
  • 1 large dill pickle chopped
  • 1/3 cup paleo mayo*
  • 2 tablespoons Dijon mustard
  • sea salt and freshly ground black pepper to taste


  • In a large bowl, combine all ingredients until fully mixed. Serve cold.
