Dijon Egg Salad
- 4 large hard-boiled eggs peeled and chopped
- 1/2 small red onion chopped
- 1 large dill pickle chopped
- 1/3 cup paleo mayo*
- 2 tablespoons Dijon mustard
- sea salt and freshly ground black pepper to taste
- In a large bowl, combine all ingredients until fully mixed. Serve cold.
