Curried Chicken Salad
- 1 boneless skinless chicken breast cooked and chopped
- 1/3 cup paleo mayo*
- 1 small onion chopped
- 1/4 cup chopped green onions
- 1 teaspoon cumin
- 1/2 teaspoon turmeric
- 1/2 teaspoon coriander
- 1/4 teaspoon ground ginger
- sea salt and freshly ground black pepper to taste
- In a large bowl, combine all ingredients until evenly mixed. Serve cold.
