Cheesy Spinach Potato
- 1 large baked russet potato
- 1/4 cup spinach
- 3 tablespoons shredded low fat Cheddar cheese
- 1 tablespoon low fat sour cream
- Salt and pepper to taste
- Split a large baked russet potato and stuff with 1/4 cup spinach, 3 tablespoons shredded low fat Cheddar cheese, 1 tablespoon low fat sour cream and salt and pepper to taste. Broil until cheese starts to melt.
