Almond Butter Power Bars

  • 1 cup almond butter
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup chopped raw walnuts
  • 1/2 cup chopped raw almonds
  • 2 tablespoons cacao nibs
  • 4 dates pitted
  • 1 teaspoon vanilla extract


  • In food processor, blend together all ingredients until evenly mixed. It can be as smooth or chunky as you like it.
  • Spread mixture into a pan lined with parchment paper. Evenly spread and flatten it. Let it sit for about 10 minutes, then cut and serve.
