Almond Butter Power Bars
- 1 cup almond butter
- 1/2 cup unsweetened shredded coconut
- 1/2 cup chopped raw walnuts
- 1/2 cup chopped raw almonds
- 2 tablespoons cacao nibs
- 4 dates pitted
- 1 teaspoon vanilla extract
- In food processor, blend together all ingredients until evenly mixed. It can be as smooth or chunky as you like it.
- Spread mixture into a pan lined with parchment paper. Evenly spread and flatten it. Let it sit for about 10 minutes, then cut and serve.
