Pickled Veggie and Chicken Sliders
- 2 cups apple cider vinegar
- 2 tablespoons chopped dill
- 1 tablespoon whole peppercorns
- 2 large carrots chopped
- 1 large shallot chopped
- 2 medium cucumbers chopped
- sea salt and freshly ground black pepper to taste
- 3 cups cooked and shredded chicken breast
- 8 leaves Butter lettuce
- In an airtight container add first 6 ingredients (vinegar through cucumber). Mix in sea salt andfreshly ground black pepper. Cover and refrigerate overnight.
- Layer shredded chicken and pickled veggies on butter lettuce leaves and serve.
