Pickled Veggie and Chicken Sliders

  • 2 cups apple cider vinegar
  • 2 tablespoons chopped dill
  • 1 tablespoon whole peppercorns
  • 2 large carrots chopped
  • 1 large shallot chopped
  • 2 medium cucumbers chopped
  • sea salt and freshly ground black pepper to taste
  • 3 cups cooked and shredded chicken breast
  • 8 leaves Butter lettuce


  • In an airtight container add first 6 ingredients (vinegar through cucumber). Mix in sea salt andfreshly ground black pepper. Cover and refrigerate overnight.
  • Layer shredded chicken and pickled veggies on butter lettuce leaves and serve.
